Combine mayonnaise, relish, mustard, paprika, sugar, onion powder, beef bouillon, and garlic powder in a bowl; season with salt and pepper and refrigerate sauce.

Soak onions in cold water and form beef into 8 patties; season with salt and pepper.

Toast bun halves in a hot oiled skillet until lightly browned, adding more oil as needed.

Cook patties in the skillet over medium-high heat until browned and well cooked, about 1 to 2 minutes per side.

Drain onions and assemble the burgers: spread sauce on bottom buns, add cheese, onions, lettuce, 3 pickles, and a patty. Add another bun, more sauce, onions, lettuce, 3 pickles, and a second patty. Top with bun and repeat for remaining burgers.
