Marinate chicken strips in a zip bag with 1 cup buttermilk and 1 tablespoon cajun or creole seasoning for 3 hours or overnight.
Prepare breading station: mix flour, cornstarch, baking soda, and breadcrumbs in one dish, and mix remaining buttermilk with 1.5 teaspoons of seasoning in another.
Discard marinade, then coat chicken with dry mixture, dip in buttermilk mixture, and re-coat with dry mixture.
Place coated chicken strips on a wire rack for 5 minutes to let breading adhere.
Heat oil to 375F in a frying pan, fry chicken strips for about 4 minutes per side until golden brown and cooked through, then drain on paper towel.
Mix mayonnaise, ketchup, Worcestershire sauce, black pepper, garlic powder, and creole seasoning in a bowl to make Cane’s sauce. Serve on the side for dipping.
